Ingredients

Potato Layer
  • 5 medium-sized medium-sized potatoes, sliced into 1 cm thick slices Starchy varieties like Russet or Yukon Gold work best.
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh rosemary, chopped Alternatively, use 1 teaspoon dried.
Filling
  • 2 onions, sliced
  • 75 g pancetta, diced Can be substituted with bacon, or omitted for a vegetarian version.
  • 75 g Leerdammer cheese, or your cheese of choice Use any melty cheese like mozzarella or cheddar.

Method

Preparation
  1. Preheat your oven to 200°C (400°F).
  2. Arrange the potato slices in a single layer on a baking tray, ensuring they have space to crisp up.
  3. Drizzle olive oil over the potatoes and sprinkle with salt, pepper, paprika, oregano, and fresh rosemary. Toss to coat.
  4. Bake for about 30 minutes or until golden brown and crispy, flipping halfway through for even cooking.
Cooking Filling
  1. While the potatoes are baking, heat a large frying pan over medium heat and add pancetta. Cook until browned and crispy, about 5-7 minutes.
  2. Add the sliced onions, seasoning with salt and pepper, and cook until caramelized, about 10 minutes.
Assembly
  1. Once potatoes are crispy, remove from the oven and place the onion and pancetta mixture on half of the slices.
  2. Add cheese on top of the filling.
  3. Top each filled potato slice with another potato slice to create a sandwich.
  4. Return to the oven and bake for another 10 minutes, or until cheese is melted and bubbly.

Notes

For extra crispy potatoes, soak slices in cold water for 30 minutes, then dry before baking. Serve with salad for a meal or as an appetizer at gatherings.
