  • 2 tablespoons vegetable oil Plus more for frying.
  • 5 tablespoons cornstarch
  • 1 little all-purpose flour For dusting.
  • 1 teaspoon sweet paprika
  • to taste salt Adjust to taste.
  • 2 tablespoons fresh parsley, finely chopped
  • 1 cup breadcrumbs, for coating About 100 g.
For the Dipping Sauce
  • 150 g sour cream
  • 2 tablespoons mayonnaise
  • 1 clove garlic, minced For the sauce.
  • 1 tablespoon fresh dill, chopped
  • to taste salt Adjust to taste.

Method

Preparation
  1. Boil the Potatoes: Place the cubed potatoes in a large pot, cover with water, and bring to a boil. Add salt and cook until the potatoes are tender, about 15-20 minutes. Drain and let cool slightly.
  2. Prepare the Mixture: In a large bowl, mash the cooled potatoes until smooth. Stir in the grated carrot, chopped onion, minced garlic, parsley, paprika, eggs, cornstarch, and 2 tablespoons of vegetable oil. Season with additional salt to taste.
  3. Form the Patties: Divide the mixture into equal portions and shape them into patties. If the mixture is too sticky, lightly dust your hands with flour.
  4. Coat the Patties: Dip each patty into breadcrumbs, making sure they are well-coated on all sides.
Cooking
  1. Fry the Patties: In a skillet, heat enough vegetable oil over medium heat to cover the bottom. Once hot, add the patties in batches and fry until golden brown and crispy, about 3-4 minutes per side. Adjust the heat as necessary to prevent burning.
Dipping Sauce
  1. Make the Dipping Sauce: In a small bowl, mix together sour cream, mayonnaise, minced garlic, chopped dill, and salt. Adjust seasoning to taste.

Notes

Store leftover patties in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until warmed through and crispy.
