Method
Preparation
- Preheat the oven to 200°C (392°F).
- Cut off the top of the onions and peel them, leaving the root intact.
- Slice the onions into thick rings and gently separate the layers.
- Soak the onion rings in water for 10–15 minutes to help them become crispier when baked.
Coating and Baking
- In a bowl, mix rye flour and a pinch of salt for coating.
- In another bowl, whisk the eggs with a pinch of salt until well combined.
- In a third bowl, mix almond flour, grated Parmesan cheese, dried ginger, paprika, and dried basil.
- Dip each onion ring into the rye flour mixture, shake off excess, then dip into the beaten eggs, and finally coat them in the almond flour mixture.
- Place the coated onion rings on a baking sheet lined with parchment paper and bake for 20 minutes or until crispy and golden brown.
Making the Sauce
- For the sauce, peel and dice the cucumber and avocado, and chop the fresh basil.
- In a bowl, combine the diced cucumber, avocado, and basil.
- Season with apple cider vinegar and salt to taste, then mix well.
Serving
- Serve the crispy baked onion rings with the refreshing cucumber avocado sauce and enjoy!
Notes
Soaking the onion rings in water enhances crispiness and reduces bitterness. Ensure even coating by shaking off the excess flour. If they aren't crispy enough, increase baking time slightly.
