Ingredients

Pastry Ingredients
  • 5 sheets fresh yufka sheets (fresh phyllo dough sheets) Yufka sheets are preferred for their light texture.
  • 1 liter bottle of mineral water Optional for hydration.
  • 1 pack cream 200 ml / 6.76 fl oz.
  • 1 tea glass of oil Approx. 125 ml / 4.23 fl oz.
  • 1 glass of water Approx. 240 ml / 8.12 fl oz.
  • 0.5 glass of oil Approx. 60 ml / 2.03 fl oz. for coating.

Method

Preparation
  1. Begin by taking the ready-made phyllo dough and cut it into triangles.
  2. Fill each phyllo triangle with your choice of filling.
  3. To prevent the ends from unraveling, dip your hands in water and rub it over the top of the phyllo, then roll the phyllo up tightly.
  4. Continue this process with all the phyllo sheets, making mini boreks until you’ve used them all up.
  5. Line a baking tray with parchment paper.
  6. In a small bowl, mix together the half glass of oil and any desired seasoning to make the special oily sauce.
  7. Dip each borek into the oily sauce, ensuring they’re thoroughly coated, and arrange them on the lined baking tray.
  8. Sprinkle toppings like sesame seeds, black cumin seeds, or blue poppy seeds on top of the boreks.
Baking
  1. Bake the prepared pastries in a preheated oven at 180°C (350°F) for about 25-30 minutes or until golden brown.
  2. Once baked, transfer the crispy boreks to a serving plate.

Notes

Best served warm, straight from the oven. Pair with yogurt or a fresh salad for a balanced meal. Can be prepared in advance and frozen before baking.
