Ingredients

Main Ingredients
  • 3 medium egg whites Ensure the bowl is clean for maximum volume.
  • 200 grams powdered sugar, sifted (about 1 ⅔ cups) Adjust sweetness to taste.
  • 350 grams ground almonds (about 3 cups) Can substitute with other nuts if desired.
  • 1.5 teaspoons cinnamon, or to taste Add more for a stronger flavor.

Method

Preparation
  1. In a clean bowl, use an electric mixer to beat the egg whites until soft peaks form.
  2. Gradually add the sifted powdered sugar while continuing to whisk until stiff and shiny.
  3. Gently fold in the ground almonds and cinnamon to form a homogeneous dough.
  4. Wrap the dough in plastic wrap and refrigerate for at least 2 hours (overnight is ideal).
Baking
  1. Sprinkle a clean surface with ground almonds and roll out the dough to 0.5-0.8 cm thickness.
  2. Cut out star shapes using cookie cutters. If the dough sticks, dip the cutters in cold water or powdered sugar.
  3. Preheat oven to 100 degrees Celsius (about 210 degrees Fahrenheit) and bake the stars for 13-20 minutes, checking for a firm surface that is still white and slightly soft.

Notes

Arrange cooled cookies on a platter, optionally dusting with powdered sugar. These treats pair well with spiced tea or coffee. For extra flair, serve with fresh fruit or chocolate sauce. Store in an airtight container for up to a week, or freeze for up to three months.
