Ingredients

Cookies
  • 200 g ground hazelnuts (about 2 cups)
  • 100 g sugar (about 1/2 cup)
  • 200 g butter, softened (about 1 cup)
  • 300 g flour (about 2 1/2 cups)
  • 1 packet vanilla sugar (about 2 teaspoons)
  • 1 teaspoon baking powder
Filling
  • 250 g nougat (about 9 oz)

Method

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, beat together the softened butter, sugar, vanilla sugar, and ground hazelnuts until it reaches a creamy consistency.
  3. Incorporate the flour and baking powder into the mixture. Stir until you have a smooth dough.
  4. Lightly flour your workspace and roll out the dough to about 1/4 inch thickness.
  5. Use a star-shaped cookie cutter to cut out stars from the dough and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake the stars in the preheated oven for 10-12 minutes, or until they are gently golden brown.
Assembly
  1. Once cooled, take two cookies and spread some nougat filling between them, pressing gently to adhere.
  2. Allow the filled cookies to cool completely and enjoy!

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. For cleaner edges while cutting the dough, dip your cookie cutter in flour before each cut. If you can't find nougat, consider using chocolate hazelnut spread as a deliciously creamy filling.
