Ingredients

Fruits and Nuts
  • 2 cups mixed candied fruit about 300g
  • 1 cup raisins about 150g
  • 1 cup walnuts, chopped about 100g
Batter Ingredients
  • 1 cup butter, softened about 225g
  • 1 cup sugar about 200g
  • 4 large eggs
  • 2 cups all-purpose flour about 250g
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan to prevent sticking.
  2. In a mixing bowl, combine the mixed candied fruit, raisins, and chopped walnuts. Toss them with a tablespoon of flour to evenly coat.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. In a separate bowl, whisk together the remaining flour, baking powder, salt, cinnamon, and nutmeg.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Gently fold in the fruit and nut mixture until evenly distributed.
  9. Pour the batter into the prepared cake pan, smoothing the top.
Baking
  1. Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serving
  1. Once cooled, cut the cake into slices and serve on a platter, optionally dusting with powdered sugar or drizzling with icing.

Notes

Consider soaking the dried fruits in rum or orange juice for added flavor. Wrapped tightly, this cake lasts for weeks.
