Preparation
- Season the chicken breast generously with salt and black pepper on both sides.
- In a frying pan, heat the vegetable oil and 1 tablespoon of butter over medium heat.
Cooking
- Add the chicken breast to the pan and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.
- In the same pan, add the sliced mushrooms and sauté for about 4-5 minutes until they soften and release their juices.
- Stir in the remaining 2 tablespoons of butter, letting it melt and coat the mushrooms.
- Pour in the heavy whipped cream and water, stirring well. Allow the sauce to simmer gently for 3-5 minutes until it begins to thicken slightly.
- Add minced garlic and chopped parsley to the sauce, mixing to combine.
- Return the chicken breast to the pan, spooning the creamy mushroom sauce over the top. Let it simmer for an additional 2-3 minutes to heat through.
Serving
- Serve hot, garnished with more fresh parsley if desired.
Notes
Ensure to not overcrowd the pan when cooking to achieve nice browning. Adjust seasoning to preference; a pinch of nutmeg can enhance the creamy sauce.
