Preparation
- Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry into a large rectangle, about 3-4 mm (1/8 inch) thick.
- Spread a thin layer of ketchup evenly over the pastry, leaving a 2 cm (1 inch) border around the edges.
- Sprinkle the chopped cooked bacon evenly over the ketchup.
- Scatter the grated mozzarella cheese on top, followed by the finely chopped spring onions and the boiled and chopped chicken eggs. Season with salt and pepper to taste.
- Starting from one long edge, carefully roll the pastry into a tight log, enclosing the fillings.
- Form the log into a ring shape on the prepared baking sheet, pinching the ends together to seal.
- Beat the remaining egg and brush it over the entire surface of the ring for a golden finish.
Baking
- Bake in the preheated oven for 20 minutes until the pastry begins to puff and turn lightly golden.
- Remove from the oven and sprinkle the crumbled feta cheese evenly over the top.
- Return to the oven and bake for another 20 minutes until the pastry is fully golden, crispy, and the cheese is melted.
Dipping Sauce Preparation
- While the ring bakes in the second phase, prepare the dipping sauce: In a bowl, mix the sour cream with the finely chopped pickled cucumbers, minced garlic, and chopped parsley. Season with salt and pepper to taste. Chill until ready to serve.
Serving
- Let the puff pastry ring cool for 5-10 minutes on the baking sheet before transferring to a serving plate.
- Slice and serve warm with the creamy sour cream dipping sauce on the side.
Notes
You can prepare the puff pastry ring a few hours in advance and keep it in the fridge until ready to bake. Feel free to customize the filling with different cheeses or vegetables to your taste. For an egg-free wash, use milk or melted butter.
