Ingredients

Main ingredients
  • 2 medium medium carrots, peeled and finely grated
  • 1 cup shredded mozzarella cheese (about 100g) or any melting cheese
  • 1/2 cup shredded cheddar cheese (about 50g)
  • 1/4 cup chopped fresh parsley or cilantro optional
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin powder
  • to taste Salt and black pepper
  • 4 to 6 pre-made flatbreads store-bought or homemade
  • 1/4 cup grated Parmesan cheese (about 30g)
  • to taste Fresh arugula or microgreens optional for garnish

Method

Preparation
  1. Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a mixing bowl, combine the grated carrots, mozzarella cheese, cheddar cheese, parsley or cilantro (if using), garlic powder, cumin powder, salt, and black pepper. Stir until everything is mixed evenly.
Baking
  1. Place the flatbreads on the baking sheet and divide the carrot mixture among them, spreading it out while leaving a small border around the edges.
  2. Evenly sprinkle each flatbread with grated Parmesan cheese.
  3. Bake for about 10 to 12 minutes, or until the cheese becomes bubbly and golden. For an extra golden finish, you can broil for an additional 1 to 2 minutes—just watch closely to avoid burning!
  4. Let the flatbreads cool slightly before slicing.
  5. If you want, garnish with fresh arugula or microgreens for a touch of green.

Notes

These flatbreads are perfect for snacks, appetizers, and light meals. Variations include adding other grated vegetables or different cheeses.
