Ingredients

Main Ingredients
  • 2 large large potatoes (about 1 pound or 450 g) Choose starchy potatoes like Russets for a fluffy interior or waxy potatoes like Yukon Golds for a creamier texture.
  • 1-2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Sweet or smoked paprika, to taste
  • 2 large large eggs
  • 2-3 tablespoons grated Parmesan cheese If out of Parmesan cheese, other cheeses like cheddar or mozzarella can be used.
  • 1 tablespoon Greek yogurt Adds creaminess and tang; substitute with sour cream if needed.
  • Chopped fresh parsley (optional, for garnish)
Garlic Yogurt Sauce
  • 2-3 tablespoons Greek yogurt For sauce
  • Salt, for sauce
  • Chopped parsley (for sauce)
  • 1 clove garlic, grated

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and slice them into thick rounds, about 1 inch thick.
  3. Place the potato slices on a baking sheet. Sprinkle them generously with salt, black pepper, and paprika.
  4. Drizzle olive oil over the seasoned potatoes and toss gently to coat.
  5. Bake the potatoes in the oven for 20–25 minutes, or until almost tender.
Cooking
  1. Combine the eggs, grated Parmesan, Greek yogurt, and chopped parsley in a bowl.
  2. Once the potatoes are nearly cooked, pour the cheese mixture evenly over the slices.
  3. Return the baking sheet to the oven for an additional 10–15 minutes, until the mixture is set, and the tops are golden brown.
Sauce Preparation
  1. Mix Greek yogurt with salt, chopped parsley, and grated garlic in a separate bowl.
Serving
  1. Serve the potatoes hot with the garlic yogurt sauce drizzled on top or on the side for dipping.

Notes

Keep an eye on the potatoes to avoid overcooking. Allow cooling for a few minutes before serving to help the cheese mixture firm up.
