Preparation
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 13×9 inch (33×23 cm) pan and set it aside.
- In a large bowl, combine 2 cups of all-purpose flour, 1/2 cup packed brown sugar, and 3/4 cup cold cubed butter. Blend until it resembles coarse crumbs and press into the bottom of the prepared pan.
Make Filling
- In another bowl, beat the softened cream cheese, 1/2 cup plus 2 tablespoons of white sugar, and 1 teaspoon of vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition. Fold in the chopped apples, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Pour this mixture over the crust.
Prepare Topping
- In a separate bowl, mix together 3/4 cup flour, 3/4 cup brown sugar, 2 tablespoons white sugar, and 1/2 cup oats.
- Add 1/3 cup cold cubed butter and mix until it resembles coarse crumbs. Sprinkle over the apple cheesecake filling.
Bake
- Bake for 45-50 minutes or until the topping is golden brown and the filling is set.
- Allow to cool completely, then drizzle the caramel over the cooled bars before cutting into squares.
Notes
These bars can be served warm or chilled. For an extravagant touch, top each bar with whipped cream or a scoop of vanilla ice cream. A sprinkle of cinnamon or a drizzle of caramel can elevate the presentation.
