  • 3/4 cup grated parmesan cheese (about 75g)
  • 2/3 cup panko bread crumbs (about 45g)
  • 1 teaspoon salt (5g)
  • 1 teaspoon garlic powder (3g)
Wet Mixture
  • 4 tablespoons butter, melted (about 56g)
  • 2 tablespoons hot sauce (30ml)
  • Mayonnaise for brushing
Chicken
  • 2 1/2 pounds chicken tenders (about 1.13 kg)
Serving Suggestions
  • Ranch or blue cheese dressing for serving

Method

Preparation
  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place a wire cooling rack on a baking sheet and spray it with nonstick cooking spray.
  3. Crush the Cheez It crackers in a ziplock bag or food processor until you have about 2 cups of crumbs.
  4. In a shallow bowl, combine the crushed Cheez It crackers, grated parmesan cheese, panko bread crumbs, garlic powder, and salt. Mix well.
  5. In a small bowl, mix the melted butter with the hot sauce until combined.
  6. Pour the butter and hot sauce mixture into the breadcrumb mixture and stir until everything is evenly coated.
  7. Pat the chicken tenders dry with paper towels and brush a light coating of mayonnaise over each tender.
  8. Dredge the chicken tenders in the breadcrumb coating, making sure to press firmly so the crumbs adhere well.
  9. Place the breaded tenders on the prepared wire rack or baking sheet, ensuring they are not touching.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (75 degrees Celsius) and they are golden brown.
  2. Let the Buffalo Chicken Tenders cool for a few minutes before serving.

Notes

Serve with ranch or blue cheese dressing and add celery and carrot sticks for color. Consider double-dipping for extra crunch and adjust the hot sauce for preferred heat level.
