Ingredients

Main Ingredients
  • 2 cups grated carrots (about 4 medium carrots)
  • 1 cup vegetable oil (240 ml)
  • 1 cup sugar (200 g)
  • 4 large eggs
  • 2 cups all-purpose flour (240 g)
  • 1 tablespoon baking powder (12 g)
  • 1/2 teaspoon salt
  • 1 cup chocolate glaze or cream cheese frosting (for topping)

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a blender, combine the grated carrots, vegetable oil, sugar, and eggs. Blend until smooth and creamy.
  3. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  4. Pour the smooth carrot mixture into the dry ingredients. Gently stir until just combined; don’t overmix!
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  8. Once cool, generously top your cake with chocolate glaze or cream cheese frosting before serving.

Notes

For added moisture, consider adding 1/2 cup of applesauce to the batter. You can also include chopped nuts like walnuts or pecans for texture and flavor. Spice it up by adding a teaspoon of cinnamon or nutmeg.
