Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the mashed bananas, almond milk, melted vegan butter, and maple syrup. Whisk until well combined.
- Add the baking powder, baking soda, and vanilla extract to the wet ingredients. Stir until fully mixed.
- Gradually add the all-purpose flour and almond flour, stirring gently until just combined – avoid overmixing.
- Gently fold in the blueberries, being careful not to mash them.
Baking
- Pour half of the batter into the prepared loaf pan. Spread the vegan cream cheese evenly over the batter, then pour the remaining batter on top.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick comes out clean from the center.
- Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Serving
- For optional icing, mix the melted vegan butter with powdered sugar and drizzle over the cooled bread. Serve fresh or at room temperature.
