Main Ingredients
  • 250 g gluten-free flour (about 2 cups)
  • 80 ml olive oil (about 1/3 cup)
  • 1 teaspoon vanilla extract
  • 100 g chopped walnuts (or substitute with almonds or hazelnuts, about 1 cup)

Method

Preparation
  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. In a large bowl, mix together the gluten-free flour, olive oil, and vanilla extract. Stir until you form a smooth dough.
  3. Add in the chopped walnuts (or your choice of nuts) and mix well to combine.
  4. Shape the dough into logs about 5-7 cm wide. Place them on a baking sheet lined with parchment paper.
  5. Bake in the oven for 15-20 minutes, or until the tops are golden brown.
  6. Allow the biscotti to cool completely before cutting them into individual pieces.
  7. For an extra crunchy texture, place the sliced pieces back onto the baking sheet and return them to the oven for an additional 10 minutes.

Notes

These treats are versatile; pair them with coffee or tea, and consider swapping nuts or adding spices like cinnamon for extra flavor. Store them in an airtight container for up to a week.
