Ingredients

Main Ingredients
  • 2 pieces zucchinis (about 500 g) Choose fresh zucchinis for the best flavor.
  • 0.5 tsp salt
  • 1 tsp dried garlic
  • 0.5 tsp smoked paprika
  • 2 tbsp vegetable oil For coating the zucchini.
  • 80 g cheese, grated (e.g., mozzarella, cheddar, or your favorite) Use a cheese that melts well.
  • 1 tbsp mayonnaise Adds creaminess to the topping.
  • Fresh dill (to garnish)

Method

Preparation
  1. Preheat your oven to 200°C (390°F).
  2. Wash the zucchinis thoroughly and cut them into ½ inch (1.25 cm) thick circles.
  3. Place the zucchini slices on a baking sheet in a single layer.
  4. In a mixing bowl, combine salt, dried garlic, smoked paprika, and vegetable oil. Drizzle this mixture over the zucchini slices and toss until well coated.
Baking
  1. Bake in the preheated oven for 10-15 minutes until they are tender and starting to turn golden.
  2. While the zucchini is baking, mix the grated cheese and mayonnaise in a small bowl until well combined.
  3. After the initial baking time, remove the zucchini from the oven and spread the cheese mixture evenly over each slice.
  4. Return the baking sheet to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
  5. Once done, take the zucchini out of the oven and garnish with fresh dill before serving.

Notes

For extra crunch, consider giving the zucchini a light dusting of breadcrumbs before adding the cheese topping. Let the zucchini cool for a couple of minutes before serving.
