Ingredients

Main Ingredients
  • 4-5 medium medium potatoes (about 2 pounds or 900 g) Russets are excellent for baking due to their fluffy interiors; Yukon Golds yield a creamier texture.
  • 1 teaspoon paprika
  • 1 teaspoon dried garlic
  • 3 tablespoons olive oil
  • 4 large eggs
  • 200 g sour cream
  • 2 tablespoons chives, chopped
  • 150 g cherry tomatoes, halved
  • 200 g Jägerwurst or sausage of choice, sliced Use any cooked sausage you prefer, such as chicken or vegetarian options.
  • 100 g cheese, grated (cheddar works well) Any melting cheese; mozzarella or gouda are great alternatives.
  • Fresh parsley, for garnish

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and cut them into medium-thick slices. Arrange them in a baking dish in a single layer.
  3. Season the potato slices with salt, black pepper, paprika, and garlic. Drizzle with olive oil and toss until evenly coated.
  4. Bake in the preheated oven for about 20 minutes, or until the edges start to crisp up.
Cooking
  1. While the potatoes bake, whisk together the eggs and sour cream in a bowl. Stir in the chopped chives.
  2. Slice the cherry tomatoes and set aside.
  3. After 20 minutes, remove the potatoes from the oven. Layer the sausage on top, followed by the egg mixture.
  4. Evenly sprinkle the grated cheese over the top.
  5. Reduce the oven temperature to 350°F (180°C) and return the dish to the oven. Bake for an additional 15-20 minutes, or until the cheese is melted and golden.
  6. Once done, take it out of the oven and garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F (175°C) for about 10-15 minutes until warmed through.
