Method
Preparation
- In a bowl, combine the halbfeines Mehl, Zucker, Vanillezucker, Salz, and Trockenhefe.
- Add the Ei, Öl, Milch, and a dash of Zitronensaft. Knead into a smooth dough and let it rise in a warm place until doubled in size.
Forming the Strudel
- Divide the risen dough into two parts. Roll each part into a thin rectangle.
- Sprinkle the dough with Semmelbrösel to absorb excess moisture from the apples.
Filling
- Evenly distribute the grated Äpfel over the breadcrumbs.
- Sprinkle with Zimt, Vanillezucker, and Zucker according to taste.
Rolling and Rising
- Carefully roll the dough with the filling into a roulade and place on a baking sheet lined with parchment paper.
- Allow the roulades to rise for another 15 minutes on the baking sheet.
Baking
- Brush the roulades with the whisked Ei and milk, and poke a few holes with a fork to allow steam to escape.
- Bake in a preheated oven at 180 °C (350 °F) for about 25 minutes, or until golden brown.
Finishing Touch
- After baking, brush the roulades with butter mixed with a bit of rum to enhance flavor and give a glossy finish.
Notes
