Ingredients

Pancake Batter
  • 2 large eggs Size is crucial for the batter consistency.
  • 2 tablespoons sugar For sweetening the batter.
  • 1 pinch salt Enhances overall flavor.
  • 250 ml Kefir (or buttermilk) Adds moisture and tenderness.
  • 250 g Semolina Gives pancakes their fluffy texture.
  • 1 teaspoon baking soda Helps the pancakes rise.
Fruit Filling
  • 2-3 medium apples Feel free to use any fruit of your choice.
  • 1 tablespoon sugar For sweetness in the filling.
  • 1 tablespoon butter For frying and caramelizing apples.

Method

Preparation of Batter
  1. In a mixing bowl, break the eggs and add sugar along with a pinch of salt. Optionally, add a splash of vanilla extract for extra flavor.
  2. Pour the Kefir into the bowl and mix well until the sugar dissolves completely.
  3. Stir in the baking soda, blending it thoroughly into the mixture.
  4. Gradually incorporate the semolina into the batter, stirring until everything is well mixed.
  5. If using cottage cheese, knead it into the mixture until it's smooth.
Preparation of Filling
  1. Peel, core, and dice the apples into small pieces.
  2. In a separate pan, melt one tablespoon of butter, add the diced apples and sprinkle with sugar. Simmer for about 3-4 minutes until tender and caramelized.
Cooking Pancakes
  1. Transfer pancake batter into a pastry bag or a snipped plastic bag for easier pouring.
  2. Heat a frying pan over medium heat and lightly grease it with butter.
  3. Squeeze small portions of the batter onto the pan to form pancakes. Place a spoonful of the caramelized apple filling on each pancake.
  4. Cover the apples with another layer of batter and cook until golden brown and crispy on both sides.

Notes

Serve pancakes warm, drizzled with maple syrup or honey, and garnished with whipped cream or a dusting of powdered sugar. You can also mix different fruits, add cinnamon for flavor, or prepare the batter the night before for convenience.
