Preparation of apple filling
- Peel and chop the apple into small pieces.
- In a medium pan over medium heat, melt 15 gr of butter and add the chopped apple, 2 tbsp of sugar, and a pinch of cinnamon.
- Sauté until the apples are tender and caramelized. Remove from heat and let cool.
Making the pastry
- In a large mixing bowl, beat together 1 egg, a pinch of salt, 8 gr of vanilla sugar, and 25 gr of sugar until well combined.
- Add 2 tbsp of milk, 50 gr of melted butter, and 4 gr of baking powder, mixing until smooth.
- Gradually incorporate 250 gr of flour until a dough forms.
Shaping the biscotti
- On a lightly floured surface, roll out the dough to about 1/4 inch thick.
- Use a round cutter to cut out circles from the rolled dough.
- Place a small spoonful of the caramelized apple filling on half of each circle.
- Fold the other half over the filling, pressing the edges to seal.
Baking
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Place the filled biscotti on the baking sheet and bake for about 15-20 minutes, until they are golden brown.
- Remove from the oven and let cool slightly before sprinkling with powdered sugar.
