Almond Flatbread Preparation
- If using whole almonds, grind them into a fine flour in a food processor or blender until they resemble almond flour.
- In a mixing bowl, beat the two eggs. Add the milk and mix until well combined.
- Stir in the ground almonds (or almond flour), a pinch of salt, and any optional spices. Mix until smooth and no lumps remain.
- Heat a non-stick pan over medium heat and lightly grease it with olive oil.
- Pour a portion of the batter into the pan, spreading it thinly to create a flatbread shape. Cook until bubbles form on the surface (about 2-3 minutes).
- Flip the flatbread and cook for an additional 2-3 minutes, or until golden brown.
- Repeat with the remaining batter, adjusting the amount of milk if necessary for a thinner or thicker flatbread.
Fluffy Almond Loaf Preparation
- Preheat the oven to 180°C (356°F).
- In a bowl, whisk the two eggs and Greek yogurt together until smooth.
- Gradually blend in the almond flour, followed by the baking powder and salt. Mix well until the batter is fully combined.
- If using, fold in any herbs for added flavor.
- Grease a loaf pan with olive oil and pour in the batter, smoothing the top with a spatula.
- Sprinkle sesame seeds on top before placing it in the oven.
- Bake for about 50 minutes, or until the loaf is golden brown and a toothpick inserted comes out clean.
Notes
Keep the pan at medium heat to avoid burning the flatbreads. A non-stick surface works best for easy flipping. Let the loaf cool in the pan for a few minutes before transferring it to a wire rack, which will help it maintain its shape. Enjoy it fresh or toasted; it makes delicious sandwiches or can be served as a side with soups or salads.
