Ingredients

Main Ingredients
  • 8 oz Pasta (penne, fusilli, or your pasta shape of choice)
  • 1 can (14 oz) Diced tomatoes (with juice)
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Frozen peas or mixed vegetables
  • Salt (to taste)
  • Black pepper (to taste)
Optional Toppings
  • Grated Parmesan cheese For garnish
  • Fresh basil (torn) For garnish
  • Red pepper flakes For a little kick

Method

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to the package instructions until it's al dente. Once cooked, drain the pasta and set aside.
Sautéing the Garlic
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and stir constantly for about 1 minute, until fragrant but not browned.
Adding Tomatoes and Vegetables
  1. Pour the can of diced tomatoes, juice included, into the skillet. Stir with the garlic and let simmer for 2 to 3 minutes. Add the frozen peas or mixed vegetables and stir gently. Cover and cook for another 3 to 4 minutes until the veggies are tender.
Combining Pasta and Sauce
  1. Add the drained pasta to the skillet with the tomato and vegetable mixture. Toss gently to coat the pasta in the sauce. Season with salt and freshly ground black pepper to taste, adding red pepper flakes if desired.
Serving
  1. Spoon the pasta into bowls or onto plates. Garnish with grated Parmesan cheese and torn fresh basil if desired. Serve warm and enjoy!

Notes

To enhance your pasta dish, serve in individual bowls with a drizzle of olive oil. It pairs well with a simple side salad or crusty bread. Leftovers make great lunches.
